Whenever I'm not sure what to make for dinner, Tex-Mex is one of the cuisines I come back to again and again. The recipes are packed with bold, vibrant flavours, plus they're easy to adapt with whatever I have on hand.

These are recipes that have been tested on my own family - some for many years! - and I hope they'll inspire your next Taco Tuesday, or any night of the week when you're craving a meal that's full of flavour and easy to pull together.

๐Ÿ‘‰ Cilantro Lime Chicken - A succulent dish made by marinading chicken thighs in a zesty marinade before roasting them to charry perfection. A huge favourite of mine!

๐Ÿ‘‰ Chicken Enchiladas - Chicken enchiladas are how Mexico does comfort food. A blistering tray of tortilla-blanket wrapped shredded chicken, with traditional flavours, snuggled in a smoky, tomato sauce.

๐Ÿ‘‰ Chicken Fajitas - A legendary dish straight from a cowboy camp, chicken fajitas with bell peppers and onions are a red hot and feisty treat.

๐Ÿ‘‰ Creamy White Chicken Chili - One of my favourite ways to turn the tables on my regular chili night is with this creamy white chicken chili. Smooth, cheesy, with a bit of a kick!

๐Ÿ‘‰ Mexican Chicken and Rice - Brimming with fluffy rice, bold beans, juicy chicken and every herb and spice in the stores, this zesty and nutritious Mexican chicken and rice is a fiesta in feast form!

๐Ÿ‘‰ Slow Cooker Pulled Pork Tacos - Tacos filled with mouthwatering pulled pork and a creamy cilantro lime slaw. Easy, effortless and delicious!

๐Ÿ‘‰ Ground Beef Tacos - A simple, classic taco meat made with a homemade spice mix. It's how I introduced taco night to my kids, and the one they still love the best!

๐Ÿ‘‰ Texas-Style Chili - My own version of this classic chili. This is one to save for colder months and for days when you need a little extra comfort!

๐Ÿ‘‰ Cilantro Lime Rice - A perfect rice side dish, made with tangy lime juice, garlic and cilantro.

๐Ÿ‘‰ Pico de Gallo - This side dish of finely chopped tomatoes, onions, garlic, chilli, cilantro and lime is a pure mouthful of Mexico.
