Summer Recipes I'm Cooking This Month

With the onset of some seriously hot weather, I've taken to a few recipes that work perfectly with the season, while also making the most of some amazing seasonal produce.

So here are a few meals that have been on repeat in our house this month, and every one of them has earned its place by being packed with flavour, reliable, and family-approved.

If you are looking for a few new ideas to add to the rotation, I hope you'll find something you love right here. These are the recipes we've genuinely been loving lately, and I can't wait for you to try them too!

๐Ÿ‘‰ Chicken Satay with Peanut Sauce - I love grilled chicken! The magic in this recipe comes from a delicious marinade and an easy peanut sauce, which could be made in 5 minutes.

๐Ÿ‘‰ Grilled Chicken Kebab - Another skewered chicken, but with very different flavours. It's straightforward to make and always delicious, making the most from the marinade and smoky grill.

๐Ÿ‘‰ Lemon Butter Cod - I've been turning to fish to add a bit of variety to meals, and this has been a favourite recently. It's fresh and flavourful, while still easy to pull together.

๐Ÿ‘‰ Summer Tomato and Cucumber Salad - I make this salad so often when tomatoes and cucumbers are at their peak. It's light, fresh, and the perfect addition to a BBQ.

๐Ÿ‘‰ Summer Picnic Couscous Salad - This loaded couscous salad, pulled together by a lemony salad dressing, is absolutely perfect for your summer picnics and barbecues!

๐Ÿ‘‰ Polenta Cake with Peaches - Baking in the heat is not the most fun, but I still can't resist this cake. The polenta gives it a unique texture, but it's fresh, seasonal peaches that pull it together.
