April always feels like a month of in-between moments in the kitchen. I'm not quite done with the comforting dishes of winter, but the first signs of spring are arriving too, with fresh herbs, lighter dinners and recipes that feel a little brighter.

Lately I’ve been leaning on a handful of recipes from the blog that strike that perfect balance: cosy enough for unpredictable weather, but fresh enough to celebrate the change in season.

These are the recipes I keep making on repeat right now - easy weeknight dinners, a soup that still feels nourishing, and other dishes that fit the season perfectly. If your cooking mood is somewhere between hearty and fresh, this little collection should fit the moment perfectly.

👉 Spring Minestrone - Green, fresh and renewing, just like the season of spring. Brimming with pasta, seasonal greens and pesto, it's a soup that will have you feeling like a whole new you!

👉 Maple BLT Sandwich with Smoky Chipotle Sauce - This version is a big step up from the original, with gorgeous layers packed with flavour between pillowy soft bread. A quick, beautiful lunch!

👉 One Pan Greek Chicken and Orzo - So much flavour, and a dish I'm loving for busy nights. It's made with Greek flavours my family loves, and topped with feta to make it extra special.

👉 Tuscan Salmon in Parmesan Cream Sauce - I'm finding that there is no wrong time to serve this salmon. It's perfect for family, friends, or a cozy dinner for two. The creamy sauce is memorable!

👉 Greek Chicken Burger with Feta - I'm clearly loving Greek food right now, so this was first on my BBQ this year. Put it on a brioche bun to take this chicken burger to the next level!

👉 Burger in a Bowl - A burger, but easier and without the mess. This has been perfect for dinners when I want something that will be light but satisfying. And easy to make it your own!
