What I’m Cooking for Cinco de Mayo - from Vikalinka

Your Cinco de Mayo Menu Is Here!

Hello Reader

it doesn't take a lot to convince me to turn dinner into a feast, and Cinco de Mayo is just too perfect to miss! I'm planning to go all out with the menu this year, with some of my favourites hitting the dinner table.

5 May just happens to land on a Tuesday this year, so I'll be leaning into Taco Tuesday, with a couple of options that are especially popular in my home.

Pair that with a starter and a set of classic sides, and I know it'll be a hit. Looking for a few more options? I have plenty more here:

👉 Nachos Supreme - Can you think of a better starter? Tortilla chips loaded with spicy chorizo sausage and oozy cheddar cheese, and topped with pico de gallo and lime crema.

👉 Slow Cooker Pulled Pork Tacos with Cilantro Lime Slaw - These tacos are filled with mouthwatering slow cooker pulled pork and creamy cilantro lime slaw. My personal favourite!

👉 Best Ground Beef Tacos - Easy and straightforward, and perfect for kids. Ditch store-bought seasoning and up the flavour with my simple homemade mix.

👉 Cilantro Lime Rice - Big, bold, and bust out; basmati rice is simmered in stock, steamed in tangy lime juice, infused with garlic, and laced with cilantro. Serve on the side or stuffed into tacos.

👉 Pico de Gallo - This side dish of finely chopped tomatoes, onions, garlic, chilli, cilantro and lime is a pure mouthful of Mexico. Cool, fiery and refreshing. Serve with the nachos and tacos!

👉 Perfect Homemade Guacamole - Smooth and creamy, made fresh with ripe avocado and zesty lime, is an essential side dish with Mexican food and the perfect snack to keep hunger at bay.

Wishing you a flavourful week ahead!

Love,
Julia x
