If you’re anything like me, early January always brings a little spark of motivation - a fresh start, a clean slate, and the desire to feel good after all the December indulgence. But delicious food and New Year’s resolutions absolutely can go hand in hand.

So this week, I’ve rounded up a few recipes that feel lighter, brighter, and nourishing without being boring or restrictive. This includes simple weeknight dinners, veggie-packed favourites, and feel-good meals that you’ll want to make on repeat.
