Spring has officially arrived, and with it comes one of my personal favourite ingredients: RHUBARB. With its vibrant pink stalks and bold sweet-tart flavour, rhubarb has a way of waking up desserts after the long winter months.

In this weekโ€™s collection, Iโ€™m celebrating rhubarb in all its playful glory. These recipes capture everything that makes rhubarb so fun to cook with in spring.

๐Ÿ‘‰ Rhubarb Crumble - An old fashioned crumble that can be made in less than an hour. Irresistible when served with vanilla ice cream or custard! Or try a Rhubarb Cobbler if that's more to your liking!

๐Ÿ‘‰ Rhubarb Slab Pie - A pie, but so much easier! It's the perfect marriage of tender pie crust and a tangy rhubarb pie filling. It's also big enough to feed a crowd!

๐Ÿ‘‰ Rhubarb Cake Sharlotka - Light like a cloud, this sweet sponge is filled with tangy rhubarb, making the perfect balance between tart and sweet. Perfect for an afternoon snack!

๐Ÿ‘‰ Rhubarb Bakewell Tart - A fresh take on a British classic, this tart has a shortcrust pastry, filled with roasted rhubarb, frangipane and more rhubarb. You have to try this!
