Goodbye Winter, Hello Spring Recipes - from Vikalinka

From Winter to Spring: Perfect Dinners for the Seasonal Shift

Hello Reader

There's something about this time of year, where we're still reaching for comfort at dinner, but the light's shifting, the farmers' markets are waking up, and suddenly all I want is food that feels a bit brighter, a bit lighter.

These are the dinners I'm making on repeat right now. Still cozy and satisfying, but with that unmistakable hint of spring creeping in.

Perfect for when winter's hanging around but spring's clearly making its entrance.

And as always, everything here uses simple ingredients and fits into real life, with those busy evenings, shifting cravings, and that growing urge to cook just a little lighter.

👉 Pasta e Piselli - A Spring miracle that's ready in just 20 minutes. Bright and delightful, this pasta with peas is a sweetly satisfying meal that will come to the rescue whenever supplies are running low.

👉 Lemon Butter Chicken Cutlets - Another quick recipe, with tender chicken cooked in a fragrant sauce. Tastes as good as it looks!

👉 Creamy Orzo Pasta Primavera - This pasta delivers it all; al dente nuggets of pasta coated in an sharp creamy cheese sauce, littered with vibrant spring vegetables, fresh herbs, and lemon.

👉 Spanish Chicken in Bravas Sauce - Add a touch of Mediterranean flare to your dinners! Chicken thighs braised in a rich and tangy tomato sauce with white beans and olives.

👉 Mongolian Beef - So quick, so easy. And so, so good! It has sweet and savoury strips of marinated beef fried with spring onions, ginger and garlic. Lovely with rice!

👉 Beef Cabbage Soup - Heartwarming and deeply nourishing. A thrifty recipe made with very little effort.

Wishing you a flavourful week ahead!

Love,
Julia x
