If there's one ingredient that truly signals the height of summer, it's a perfectly ripe tomato. Sweet, juicy, and bursting with flavour, tomatoes are at their absolute best this time of year, making now the perfect opportunity to build dishes around them.

I've gathered some of my favourite tomato recipes that let this seasonal ingredient shine. You'll see several salads here because I think they're the best way to bring out the flavour of especially tasty tomatoes, but with a couple of other options to add some variety.

So if you've picked up a basket at the farmers' market, have a garden overflowing with homegrown tomatoes, or simply spotted beautiful vine-ripened tomatoes at the supermarket, you'll find plenty of delicious inspiration below.

👉 Summer Tomato Salad with Herbs - It looks like a humble tomato salad but actually a a stunning use of ripe seasonal heirloom tomatoes and fresh herbs. Light, fresh and quick!

👉 Puff Pastry Tomato Tart with Goat's Cheese - Easy to make using prepared puff pastry, which is covered with fresh heirloom tomatoes and creamy goat’s cheese. One of my favourite lunches!

👉 Cucumber and Heirloom Tomato Salad - This salad is incredible when made with seasonal ingredients, with tomatoes really shining. Simple, but surprisingly flavour-packed.

👉 Tomato Salad with Herb Vinaigrette and Feta - This tomato salad is made with capers and feta, then dressed with a fresh herb lemon vinaigrette. Truly bursting with flavour!

👉 Ricotta Dip with Roasted Cherry Tomatoes and Basil Pesto - This combo of light and mild ricotta cheese, sweet roasted tomatoes and fragrant basil pesto will have you walking on air!

👉 Insalata Caprese (Tomato Salad with Basil and Mozzarella) - An Italian classic and so simple to make! All it takes is quality ingredients and 5 minutes of your time.
